Homemade Blueberry Pie!

Yesterday we found ourselves with a lot of extra blueberries from an event that we took them to and were not all eaten at. I decided that it would be a good time to make a blueberry pie. Although these were not freshly picked blueberries, which I find are the best of course! I still used a recipe that I found on Pinterest that I used last year and thought it turned out pretty well.
It is not my own recipe and I didn't make my own crust. I feel like I should give making my own crust a shot again because it has been quite some time since I have done that. The filling includes blueberries of course, lemon zest and juice, a little vanilla and chamomile flowers (my own additions), some sugar, and extra flour because I didn't have any corn starch. Then topped with a streusel crust that is actually very easy to make and I like better than a traditional crust! You can see the pictures below of the filling, unbaked pies, baked pies, and a piece.

I ended up making two pies not only due to the fact that when you buy premade pie crusts they come in packages of two. But because I also had too much blueberry filling for one pie, so I went ahead and decided to do two at the same time. I guess I could have made one giant juicy pie, but I am still satisfied with how they turned out.
I ended up giving one of the pies to a friend of mine who has shared it with others. She said it was good and everyone has liked it, so I feel good about that and also being able to share things that I cook/bake even thought it wasn't completely homemade.
Okay, there is so much more that I could write about, but for this post I think I'll just stay on topic with the blueberry pie. I am currently reading a novel called Nuclear Family by Joseph Han that is interesting and thought provoking that I will discuss and review soon.
